Life in Puglia revolves around farming, This regions is well known for its red earth, for its age-old olive trees and for the production of the best extra virgin olive oil in the world and one of the fundamental ingredients of Italian cooking.
In Cisternino, in the heart of the Valley of Itria, on a hill 397 metres above sea level, there is an organic farm which has been operating in the oil sector since 1917. They have BioAgriCert certification and the farm covers 25 hectares, with 1,400 centuries-old olive trees of the typical Puglia varieties: Ogliarola, Nardò, Cerasola, Fasola, Corna Leucocarpa and two others of the Mediterranean maquis.
Why are they unique? By respecting the millenary tradition in the olive picking technique exclusively by hand directly from the tree and extraction of the oil and, after careful selection, the olives are cold pressed by millstones at room temperature.
The olives are also pressed only a few hours/weeks? after having been picked, to avoid them passing the right stage of ripeness and to keep their colour, fragrance and health-giving properties intact.
