A visit to the dairy will show you the art and work that goes into making cheese and processing milk, with the ancient traditions and how these still live on in the products.
Visiting this dairy which dates back to 1882, you will have the answer to why there are holes in cheese and you can plunge into the world of milk, seeing its production first-hand and learning curious facts, the tradition handed down from one generation to the next and all the foods that derive from milk which make milk from Pusteria so healthy!
You will have the chance to visit the production room and follow the production line from above, looking down through large windows; this is where fresh milk cream, butter and yogurt are made.
The tour starts with a visit to the small museum, which offers you the opportunity to learn about the history of the rich tradition of milk processing and cheese making in Val Pusteria. Then a short film will show you the daily life of the peasants and explain the different work cycles, from curdling to salting.
The cellar where the cheese ripens will show you the art of storing and ageing cheese: this is the place where every cheese receives the time it needs to mature and develop its unmistakable aroma.
At the end of the tour you will be able to taste and buy all the high quality products in the dairy’s shop.
